Healthy Bread in Five Minutes a Day, by Jeff Hertzberg, M.D., and Zoe Francois, is a cookbook that just might change your life. Their no-knead method totally surprised me! You just dump the ingredients into a big bowl/container, and let it sit for two hours. Then, you just shape and bake the bread. Refrigerate the rest and simply pull off a bit of dough when you want to make bread in the next few weeks.


Brilliant? I say yes!


I sometimes read cookbooks like novels, and this book (which I read over the holiday weekend) is filled with good ideas about healthy bread baking. I'm officially hooked. Apple barley bread? Yes please!
